Bacon Wrapped Filets with Green Beans
Ingredients for Filets 4 Thick slices of apple wood bacon 4 8-10 oz. Filet mignon steaks Salt and pepper to season 4 Tablespoons salted butter 1 Garlic clove peeled 2 Tablespoons grape seed oil Twine or toothpicks
Ingredients for Green Beans 1 Pound fresh green beans (ends trimmed) 1 Tablespoon sesame oil 1 Tablespoon olive oil 1 Teaspoon salt 1/2 Teaspoon black pepper 2 Teaspoons minced garlic 2 Teaspoons brown suger 1/2 Cup shaved, sliced, or slivered almonds |
Instructions for Filets 1. Preheat oven to 400°F. 2. Wrap filets with bacon and secure with twine by wrapping and tying or by inserting a tooth pick at the end of the bacon wrap. 3. Season with salt an paper. 4. In skillet heat oil and butter on medium / high heat until butter turns brown. 5. Add filets and sear for 1 minute on each side. Then turn filet on the bacon side and roll in hot pan for a minute or more. 6. Roast in oven 5-8 minutes for medium rare.
Instructions for Green Beans 1. Ensure beans are patted dry. 2. Add beans to a large skillet with oil. 3. Saute over medium heat for 1-2 minutes. 4. Add garlic, salt, pepper, brown sugar and almonds. 5. Saute 10 minutes or until green beans are easily pierced with a fork. 6. Allow to cool slightly before serving. |
