Cast Iron Crepes
Ingredients 2-1/4 Cups whole milk 4 Large eggs 3 Tablespoons sugar 1 Tablespoon vanilla 1/2 Teaspoon salt 1/4 Cup melted butter 1-1/2 Cups flour 4 Oz butter for cooking Berries for Topping Berries 2 Teaspoons baking powder 1/4 Cup sugar 1 Tablespoon fresh squeezed lemon

Instructions 1. In a large bowl, mix together the berries, lemon juice, and 1/4 cup of sugar. Set this mixture aside. 2. In another large bowl, whisk together the milk, eggs, 3 tablespoons of sugar, vanilla, salt, and melted butter. Gradually add in the flour, mixing until fully combined and ensuring there are no lumps. 3. Heat your 'Comal' or cast iron griddle on the stove until its nicely warmed. Add 1-2 Oz of butter to the griddle for cooking. Using a 1/4 measuring cup, scoop the batter and pour it onto the hot griddle, spreading it evenly. 4. Once bubbles start to form on the surface, flip the crepe to cook the other side for 1-2 minutes, then remove from the griddle. Add more butter for cooking as necessary. Serve Serve crepes topped with berry mixture and a dollop of whipped cream.
