Double Fried Cast Iron French Fries

Ingredients 4 Large russet potatoes 4 Quarts of beef tallow 1 Tablespoons sea salt (for soak) 1 Tablespoon sea salt (for seasoning) 1 Tablespoon white vinegar

Instructions 1. Rinse to clean the potatoes. 2. Cut potatoes into strips. 3. Cover completely with cold water that includes sea salt & vinegar. Soak the cut potato strips for at least 1 hour. Can soak in refrigerator for up to 24 hours. 4. Drain and dry the potatoes thoroughly with paper towels. 5. Heat the beef tallow in your Dutch Oven to 325°F. 6. First Fry - Add the potatoes strips in small batches and cook for 7 minutes until tender and pale, but not browned. 7. Remove and let the strips drain and rest on a wire rack or paper towel for 15 minutes. 8. Second Fry - Increase the beef tallow temperature to 375°F. and fry the par-cooked potatoes for 2-4 minutes until they turn golden brown and extra crispy. 9. Transfer the hot fries to a large bowl, blot excess tallow, and immediately season generously with sea salt.
